Easy no-bake Vegan Oat Balls

Quick, simple, vegan and fun to make! Make plenty to have on hand when you are on the go. Easy to take with you anywhere! You can easily substitute the peanut butter for any nut or seed butter. If you are not using the date paste then just add a little more of your nut/seed butter. You can also use any dried fruit in place of the goji berries.

Instructions
To make the date paste if using
Step 1
Remove the seed from about 1/2 cup of medjool dates
Step 2
Soak in hot water while you gather the rest of your items, about 10-15 minutes
Step 3
Drain water and mash up the dates with the back of a spoon
Putting the oat balls together
Step 4
Place your date paste, melted coconut oil and peanut butter into a medium sized mixing bowl and mix well
Step 5
Add the remaining ingredients into the bowl and mix well with a spoon or just use your hands! This is a little messy but certainly fun!
Step 6
Be sure all dried ingredients are mixed into the wet and form your oat balls.
Step 7
Size of the balls can vary but I can usually get about 20 1-inch sized ones
Step 8
Store in a sealed container in the fridge for up to 2 weeks.
