Step 1
Preheat your oven (if making muffins – 350°F) or lightly oil a skillet/griddle if making pancakes. In a large bowl, whisk together the eggs and sugar until slightly frothy. Add the vanilla extract, Greek yogurt, and milk. Stir until smooth. In a separate bowl, combine: 2 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon salt
Mix well, then gradually add to the wet ingredients. Stir gently until just combined — don’t overmix. Use the batter for: Pancakes: Cook on a medium-hot griddle, flipping when bubbles form. Muffins: Pour into greased or lined muffin tins and bake for ~20–25 minutes, or until a toothpick comes out clean.
