Instructions: 1. Preheat oven to 350°F (175°C). 2. In a large mixing bowl, mash bananas. 3. Add melted butter, both sugars, egg, and vanilla. Whisk until well combined. 4. Sift in flour, then add baking soda and salt. Mix gently until just combined. 5. Fold in chocolate chips. Batter will be thick. 6. Spray 6 mini loaf pans with baking spray or line with parchment. 7. Divide batter evenly among pans. Top with extra chocolate chips and chopped walnuts (if using). 8. Bake at 350°F for 35–40 minutes, or until a toothpick or chopstick inserted comes out clean. 9. Let cool slightly before removing from pans
