Instructions
Step 1
Brush 1 tsp olive into a thin layer on a skillet, and set over medium heat



Step 2
Sprinkle ½ cup parmesan in an even layer covering the bottom of the pan.

Step 3
Cook for 2 minutes until the cheese begins to melt.
Step 4
Crack the eggs onto the cheese, then cover pan and cook until the eggs are starting to set but aren't cooked through, 2-3 minutes.

Step 5
Uncover and turn the heat to medium-high to finish cooking the eggs for another 1-2 minutes until edges are crispy and golden brown.
Step 6
To serve, season eggs with salt and pepper.
