A very basic Italian staple! This is the base version, but you can add onions, zucchini, potatoes etc. as you prefer :)

Instructions
Step 1
In a bowl, crack the eggs and add the salt, pepper and Parmesan. Whisk together until homogenous
Step 2
Add the oil to the pan and, once warm, add the egg mixture. Cook for 10 minutes on medium low heat, covered with a lid
Step 3
Remove the lid and, with the help of a plate, flip the frittata and slide it back into the pan. Cook uncovered for ~5 minutes and dish up!
