Coronation Chickpeas

The texture of oven-roasted chickpeas makes them so delicious and moreish. One of my favourite ways to roast them is in a splash of olive oil and some curry powder.

Instructions

Step 1
Preheat your oven to 190°C or gas mark 5
Step 2
Put the drained chickpeas into an ovenproof dish and add a generous glug of olive oil, the curry powder for the chickpeas, a pinch of salt and a pinch of pepper. Mix and roast in the oven for about 25 minutes until golden brown.
Step 3
Meanwhile, put the rice, water and a pinch of turmeric into a saucepan. Cook over a medium heat for about 7 minutes until all the water is absorbed and the rice is cooked.
Step 4
Fluff the rice with a fork and mix in the chopped coriander.
Step 5
To make the sauce; mix the creme fraiche (or yoghurt) with the remaining curry powder and a pinch of salt and pepper.
Step 6
Serve the rice with a dollop of the sauce, topped with the chickpeas, and garnish with the flaked almonds.
