Instructions
Step 1
Finely dice 2-3 white onions, then add to a pan with butter oil and a pinch of salt
Step 2
Cook on a low heat for 30-45 minutes, deglazing the pan with a splash of water when it catches
Step 3
In a bowl, mix the caramelised onions with 200g cream cheese, 2tbsp mayo, 1 clove of minced garlic, a handful of finely chopped chives, fresh parsley and pickles
Step 4
Season with salt, pepper and a squeeze of fresh lemon juice
Step 5
Finish with a good drizzle of olive oil, more chives, and a pinch of smoked paprika
