Ingredients

1.25 lbshrimp
large, or prawns, peeled and deveined
1 Tbspall-purpose flour
1 tspsmoked paprika
Spanish
½ tspsalt
½ tsppepper
½ tspground coriander
¼ tspcayenne
¼ tspsugar
1 Tbspbutter
or ghee
3 Tbspextra virgin olive oil
3shallots
thinly sliced
4garlic cloves
chopped
0.5green bell pepper
cored and sliced
0.5yellow bell pepper
cored and sliced
1 cupcanned diced tomato
⅓ cupchicken broth
or vegetable
2 Tbspdry white wine
2 Tbspfresh lemon juice
⅓ cupparsley leaves
chopped
Instructions
Step 1
Pat the shrimp dry and place it in a large bowl. Add the flour, smoked paprika, salt, pepper, coriander, cayenne, and sugar. Toss until the shrimp is well-coated.
Step 2
In a large cast iron skillet, melt the butter with the olive oil over medium heat. Add the shallots and garlic. Cook for 2-3 minutes, stirring regularly, until fragrant.
Step 3
Add the bell peppers and cook another 4 minutes, tossing occasionally.
Step 4
Add the shrimp. Cook for 1 to 2 minutes, then add the diced tomatoes, broth, white wine, and lemon juice. Cook for a couple more minutes or until the shrimp turns bright orange.
Step 5
Stir in the chopped fresh parsley and serve.
