Ingredients

Mexican Chicken

2 lbchicken breasts

½ cupmild salsa

4 Tbspbrown sugar

4 ozgreen chilies
mild diced

14.5 ozfire roasted diced tomatoes
drained

1 Tbspchili powder

1 ½ tspsalt

1 tspground cumin

1 tspgarlic powder

1 tsponion powder

½ tsppaprika

½ tspdry oregano

½ tsppepper

Instructions
Prepare Mexican Chicken
Step 1
Place chicken in a slow cooker and add all chicken ingredients.
Step 2
Cook on high from 2-4 hours or low for 6-7 hours.
Step 3
Shred chicken and let cook on low for an additional 20 minutes. Drain excess liquid.
Prepare Burritos
Step 4
Preheat oven to 400 degrees.
Step 5
Prepare burritos with 1/2 cup chicken in each tortilla, top with cheese and peppers/onions (optional).
Step 6
Place burritos in baking dish and brush with olive oil. Cook 18-20 minutes.
Step 7
Prepare sauce by melting butter in sauce pan over medium heat.
Step 8
Whisk in flour, stirring constantly for 3 minutes. Reduce heat to low and gradually whisk in broth.
Step 9
Add spices and bring to simmer, stirring until thickened, 2-3 minutes.
Step 10
Remove from heat and stir in green chilies and cheese until melted, then sour cream.
Step 11
To serve, top burrito with sauce.
