Line a large baking sheet with parchment paper. 2. **Prep the Potatoes:** * Boil the cubed potatoes in salted water for 5–6 minutes (until just slightly soft). * Drain well and let them dry for a few minutes (this helps them crisp up). 3. **Season and Roast:** * Toss the potatoes with oil, salt, paprika, garlic powder, and pepper. * Spread evenly on the baking sheet. * **Bake for 30–35 minutes**, flipping halfway, until golden and crispy. 4. **Make the Sauce:** * In a bowl, stir together sweet chili sauce, soy sauce, vinegar, and honey (no heating required). 5. **Toss in Sauce:** * As soon as the potatoes come out of the oven, toss them in the sauce while hot. * Let sit for 2–3 minutes to soak in the flavor and get a little sticky.
