Ravioli with butter and sage

Delicious homemade ravioli with spinach and ricotta filling, tossed in a butter and sage sauce. Perfect for a quick yet gourmet dinner!

Step 1
Prepare the Filling: Blanch spinach in salted water, drain, and finely chop. Mix spinach with ricotta, Parmesan, nutmeg, salt, and pepper.
Step 2
Assemble Ravioli: Roll dough into a thin sheet. Cut in squares and place small scoops of filling on one, brush the edges with water, and cover with another square. Seal and cut into ravioli shapes, making sure all the air is out.
Step 3
Cook and Sauce: Boil ravioli in salted water for 1-2 minutes. Meanwhile, melt 50g butter in a pan with sage leaves. Add 50g of pasta water and toss the ravioli in the butter-sage sauce.
Step 4
Serve: Plate and garnish with more Parmesan, if desired.
