The Duck
The Boiling Broth
1.5lwater
boiling
8 Tbspsoft brown sugar
2 Tbspfish sauce
4 Tbspsoy sauce
4 Tbspwhite wine vinegar
1 Tbspsalt
The Glaze
The Dough
800gstrong bread flour
1 tspsalt
2 Tbspolive oil
475mlwater
room temp
1 tspyeast
1 tspsugar
1 Tbspolive oil

The Pizza
Instructions
The Dough
Step 1
Add the yeast and sugar to the water, stir, and let sit for 10 minutes. If this has froth on top you know the yeast is working.
Step 2
Add the rest of the dough ingredients to a large bowl and pour the yeast mixture in

Mix thoroughly and knead for 10 minutes
Step 4
Add a tbsp of oil to a large bowl and rub it all round
Step 5
Tuck the bottom under the dough to make it into a tight ball and sit it in the oiled bowl
Step 6
Cover with cling film and sit in the fridge overnight (or up to 24 hours)
Step 7
Bring out the dough 2 hours before you need it and form into 4 tight balls by stretching the dough round and underneath and pinching the bottom together
Step 8
Rest pinch side down on a floured deep dish tray and cover with cling film and rest at room temp for 2 hours
The Duck

Mix all the broth ingredients and bring to a boil
Step 10
Score the duck legs 1 cm deep about 5 times on each side
Step 11
Dip the duck legs in the broth and boil for 1 minute
Step 12
Brush down all sides of the duck with the glaze

Lay on a wire rack above a baking tray
Step 14
Bake the duck for 40 minutes at 160C

Raise the temperature to 200C and bake for a further 20-30 minutes until crispy
The Pizza
Step 16
Hand stretch the dough out on a flour surface to avoid knocking the air out. Start by pressing with all your fingers in the centre leaving a crust, then stretching out flat palmed while rotating the dough until it’s the desired size. Can also toss the dough between your hands to stretch it if you’re feeling confident

Grate the mozzarella

Pull the duck meat on the bone and shred

Cut the cucumber in half and scape out the seeds and discard. Cut into long thin strips

Spoon down a quarter of the hoisin onto the pizza followed by a quarter of the cheese

Lay down a quarter of the duck and a bit of extra hoisin sauce

Pizza oven: cook for 90 seconds at 450C rotating every 30 seconds

Otherwise lay the pizza in a large ripping hot frying pan and fry for 3 minutes, before placing under the grill/broiler for 2-3 minutes until the top is bubbling

Top with cucumber, slice and enjoy!
