Ingredients

4 cupschicken breast
2 Tbspunsalted butter
1 Tbspolive oil
1 x 12 ozfrozen mixed vegetables
1onion
2cloves garlic
1 x 14.5 oztinned reduced sodium chicken broth
1 cupalmond unsweetened milk
1 x 10.5 ozreduced sodium cream of chicken soup
½ cupfat free greek yoghurt
1 x 11.36 ozcheddar bay biscuit mix
½ cupshredded reduced fat cheddar cheese
1 tsponion powder
1 tspgarlic powder
½ tspblack pepper
½ tspsmoked paprika
Instructions
Step 1
Heat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with a little olive oil or cooking spray.
Step 2
Add the shredded chicken to the baking dish in an even layer. Sprinkle the frozen mixed vegetables and the additional vegetables over the chicken. (If using diced onion/garlic, sprinkle them in as well.)
Step 3
In a bowl, whisk together the low-sodium chicken broth, milk, cream of chicken soup, melted butter, and seasonings (onion powder, garlic powder, pepper, paprika).
Step 4
Pour the broth mixture evenly over the chicken and vegetables. Do not stir (this helps the cobbler-style layers form).
Step 5
Prepare the biscuit mix in a separate bowl according to the package directions, but use 1%/2% milk (or water, if the box calls for it). If the mix calls for butter, use the minimum amount listed (or swap to 1–2 tbsp melted butter total). Stir just until combined; don’t overmix.
Step 6
Dollop the biscuit batter evenly over the top of the casserole (spoonfuls across the surface). If desired, sprinkle with the reduced-fat cheddar.
Step 7
Bake uncovered for 40–50 minutes, or until the topping is deep golden and cooked through and the edges are bubbling. If the top browns too fast, loosely tent with foil for the last 10 minutes.
Step 8
Remove from oven and let stand 10 minutes. Stir the Greek yogurt until smooth, then gently dollop and swirl it into the hot filling around the edges (or serve a spoonful on each portion). This adds creaminess without heavy cream.
Step 9
Serve warm. Store leftovers covered in the refrigerator up to 4 days; reheat until steaming hot.
