Orange & Poppy Seed Muffins

Light, citrusy muffins with a soft, moist crumb and a subtle crunch from poppy seeds. These are elevated with a touch of Greek yoghurt and finished optionally with a glossy marmalade glaze. Perfect for morning tea or brunch!

Instructions

Step 1
Preheat oven to 220°C.
Step 2
In a large bowl, mix flour, sugar, and poppy seeds.
Step 3
Add the remaining ingredients and gently stir until just combined. Do not overmix.
Step 4
Spoon batter into muffin tins.
Step 5
Bake at 220°C for 5 minutes, then reduce oven to 190°C. Continue baking:

10–12 mins for small muffins
Step 7
18 mins for large muffins
Step 8
Check for doneness using a skewer — it should come out clean.
