Instructions

Step 1
In a large pot, melt the butter over medium heat. Add the sliced onions and a pinch of salt. Cook slowly over medium to low heat, stirring occasionally, until the onions are deep golden brown and caramelized — about 20–25 minutes. Take your time for best flavor.
Step 2
Add the chopped carrots and cook for another 5 minutes.
Step 3
Pour in the stock, and add the bay leaf, dill, and thyme. Cover partially and simmer for about 20 minutes, until the carrots are tender.
Step 4
Remove the bay leaf. Season with salt and pepper to taste. Stir in the milk (or cream), and blend the soup until smooth and creamy using a blender or immersion blender.
Step 5
Reheat gently if needed. Serve hot, garnished with a spoonful of sour cream if desired.
