Ingredients

For the Enhanced Dressing:

2jalapeño peppers
small, finely diced

3garlic cloves
minced

¼ cupfresh lime juice

2 tablespoonscoconut aminos
replacing soy sauce

2 tablespoonsraw honey

2 tablespoonsavocado oil

1 tablespoonsesame oil

kosher salt
to taste
For the Salad:

8 ozsirloin steak
grass-fed, increased for more protein

4 ozbrown rice noodles
or shirataki noodles, complete carbs/low-carb option

3 cupsnapa cabbage
shredded

2persian cucumbers
thinly sliced

1 cupedamame
shelled, added protein and fiber

½ cupfresh mint leaves

½ cupfresh cilantro

¼ cuphemp hearts
complete protein boost

¼ cupalmonds
crushed, replacing peanuts for better nutrition

2 cupsmixed greens
spinach and arugula for iron and fiber
Instructions
Step 1
Make dressing: Whisk all dressing ingredients in a bowl until honey dissolves. Reserve half for serving.
Step 2
Marinate steak: Season steak with salt and 3 tablespoons of dressing. Let marinate 20 minutes.
Step 3
Prepare noodles: Cook brown rice noodles according to package directions. Drain and rinse with cold water.
Step 4
Prepare vegetables: Massage cabbage and cucumbers with salt to release water, then drain.
Step 5
Cook steak: Heat a cast iron pan over medium-high heat. Cook steak 4-5 minutes per side for medium-rare. Rest 5 minutes, then slice against grain.
Step 6
Assemble: Combine noodles, vegetables, edamame, herbs, hemp hearts, and almonds. Toss with reserved dressing. Top with sliced steak.
