Instructions
Step 1
Preheat oven to 375°F (190°C).
Step 2
Sauté mushrooms, onion, zucchini or carrots, kale/chard, and spinach in a skillet with a splash of broth or olive oil for 4–5 minutes.
Step 3
In a small bowl, mix Greek yogurt, parmesan, garlic, Italian seasoning, and (optional) psyllium husk.
Step 4
Place raw chicken in a baking dish. Top with sautéed veggies and chopped artichoke hearts.
Step 5
Spread yogurt mixture evenly over the top.
Step 6
Bake uncovered for 25–30 minutes, until chicken reaches an internal temp of 165°F.
Step 7
Let rest 5 minutes before serving.
