Heat some oil (a couple of TBSP or so) or bacon grease in a large (7+ quart) pot. Add the chopped onion, peppers, jalapenos, and celery. After a few minutes, add the cubed smoked meat that you want to cook with or add back the bacon you used to make grease. Sweat on medium/ low heat until veg are soft and all juice is gone (almost starting to fry/brown), probably 10 minutes or so. If you want to add the tomato paste for a deeper more complex flavor, add it now and stir to coat everything. Make sure you stir regularly to keep browning to a minimum. Add garlic and cook until fragrant (a couple more minutes). Add the spice mix and stir to fully coat the smoked meat and veg. Add the ginger, soy, Worcestershire and stir it in thoroughly. Add the beans and mix in completely. Add the liquid – just enough to cover the beans by a half inch or so for cooking. You can always add more liquid later if needed. Bring the whole mess to a boil and then reduce heat to low simmer. Cover and cook for 1 to 2 hours, longer is always better to break down the beans and thicken everything. Once you are happy with the consistency of the beans add the finishing items. Add the cream, green onions, parsley, and sliced sausage. Add hot sauce and liquid smoke to taste. Depending on how much salt was in the meat, you may also have to add salt to taste. Turn off the heat and let it sit for 15 minutes or so. If you want it thicker, take out some of the beans and put them in a blender or just smash them up with a fork and add back to the pot.
