Instructions
Step 1
Quinoa: RINSE FIRST!!!!!
Step 2
•cook 1/2 cup quinoa in vegetable broth, add chopped carrots.
Step 3
•Bring to a boil, then simmer and cover till the liquid is gone. (About 15-20 min)
Step 4
•Fluff with fork when done then
Step 5
Salad recipe.
Step 6
•let cool and move to the fridge and let sit overnight. (If you dont have time overnight at least let cool in fridge for 3 hours ) 🤠

Add in:

-1/4 chopped red onion
Step 9
-1/2 a cucumber cubed
Step 10
-Cherry tomatoes

-lettuce of choice
Step 12
-protein of choice
Step 13
-feta (optional)

DRESSING:
Step 15
~Honey Dijon dressing~
Step 16
(About 1/2 cup serving for 2 people)

-1 part lemon juice
Step 18
-2 parts olive oil

- 1 tbps honey (more or less to your liking)

-about 1 tbsp Dijon/any mustard. (I usually just eyeball this one)

-salt / pepper

-oregano/ Italian spices ( I expirement sometimes with this)
Step 23
Mix together in small jar then close and shake/ or whisk really well in a bowl.
Step 24
Taste test dressing before serving/ adjust to your liking if needed.
Step 25
Pour over prepared salad bowl and serve.
