Instructions
Step 1
Peel the potatoes, cut into chunks, and cook in boiling water over a high heat for 12-15 minutes.
Drain and mash the potatoes.
Step 2
Fill a deep frying pan with boiling water, place over a high heat, and bring to simmer. Reduce the heat, stir the water with a spoon, then crack in 2 eggs. Poach for 3-4 minutes.
Step 3
Remove the eggs with a slotted spoon and leave to drain on kitchen paper.
Step 4
Add 2 smoked kippers to the simmering water, poach for 2-3 minutes, then leave to drain on kitchen paper.
Step 5
Pierce the bag of washed spinach a few times, then heat in the microwave on high for 1.5 minutes. (Or wilt in a large pan over a low heat then drain).
Step 6
Put the spinach in a bowl, then squeeze the lemon juice over the top.
Step 7
Serve the mash on a plate with the spinach. Top with the kipper and egg. Season with salt and pepper to taste
