2 Tbsbutter

0.5onion
sliced

2 Tbsplain flour

½ tspcurry powder
or more if you like it a bit spicier

1.75milk
To make the sauce more “pineapply”, you can mix the drained pineapple juice with milk, until you get to the quantity desired, in this case 3/4

440gcans tuna
drained and broken up with a fork

1can pineapple pieces
drained

breadcrumbs

Instructions
Step 1
Pre-heat oven 180 degrees.
Step 2
Melt butter in saucepan on medium heat.
Step 3
Add onion and fry until transparent.
Step 4
Add flour, and stir. Fry for one minute. If mixture is too “wet and sloppy”
Step 5
add a little more flour and fry. You want slightly doughy/crumbly texture.
Step 6
Stir in curry powder, and fry for one minute.
Step 7
See variation below, or just add milk gradually, stirring as you go. To make the sauce more “pineapply”, you can mix the drained pineapple juice with milk, until you get to the quantity desired (in this case – 1 ¾ cups)

may need to take the saucepan off the heat if it is getting lumpy. Stir well

between each addition of milk to avoid lumps from forming.

When sauce is thickened (almost boiling), add tuna.

Add pineapple pieces.

Cook uncovered for 3 minutes, stirring occasionally.
Step 13
Place in ovenproof dish, cover with breadcrumbs.
Step 14
Place in oven for 15 minutes.

Serve with rice or pasta.
