Instructions
Step 1
In a large stock pot, brown ground meat and drain fat.
Step 2
Add pepper and onion; cook until onion is translucent, not browned.
Step 3
Add tomatoes, tomato sauce, broth, thyme, sage, and season with salt and pepper.
Step 4
Cover and simmer for 30 to 45 minutes, until peppers are tender.
Step 5
In another saucepan, boil 2 cups of water and cook rice until tender.
Step 6
Add cooked rice to soup, heat through, and serve.
