Instructions
Step 1
1. Shred the cabbage finely and place it in a large bowl.
Step 2
2. Massage with salt for 1–2 minutes until the cabbage softens and releases some juice.
Step 3
3. In a small bowl, mix apple cider vinegar, lemon juice, and honey until the honey dissolves.
Step 4
4. Pour over the cabbage, toss well to coat evenly.
Step 5
5. Let it sit for at least 15 minutes (it’ll already turn vibrant pink), but it gets even better after a few hours in the fridge.
