Instructions

Step 1
Wash spinach thoroughly, especially the roots.
Step 2
Soak in cold water for 10 minutes.
Step 3
Make hitashi-ji sauce: boil dashi stock, Japanese soy sauce, and mirin for 2 minutes, then remove from heat.
Step 4
Bring salted water to a boil in another pot and prepare ice water bath.
Step 5
Place drained spinach in boiling water with stems submerged; after 30 seconds, push leaves down and blanch for 15 more seconds.
Step 6
Transfer to ice water and chill for 10 minutes.
Step 7
Squeeze out water using a bamboo sushi mat.
Step 8
Pour some hitashi-ji over spinach and squeeze again with the mat.
Step 9
Place in container, pour remaining hitashi-ji over top. If needed, cover with plastic wrap. Refrigerate at least 1 hour or overnight.
Step 10
Trim stems and cut into bite-sized pieces before serving.
Step 11
Serve in bowls with hitashi-ji and bonito flakes.
