Healthy Glaze:
Enhanced Roasted Garlic Cauliflower Mash
Instructions
Step 1
Prepare garlic: Preheat oven to 190°C. Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast for 40 minutes.
Step 2
Prepare vegetables: Heat olive oil in a large oven-safe skillet over medium heat. Sauté onion and garlic until translucent (5 minutes). Add fresh parsley, cook 1 minute more. Remove from heat and cool.
Step 3
Make meatloaf mixture: In a large bowl, combine ground turkey, sautéed vegetables, oat flour, Greek yogurt, almond milk, egg, tomato paste, Worcestershire sauce, salt, herbs, spices, grated carrot, and spinach. Mix gently with hands until just combined.
Step 4
Form meatloaves: Shape into 8 mini loaves, about 2.5cm thick and 5cm long.
Step 5
Brown meatloaves: In the same skillet, brown meatloaves on both sides (3-4 minutes per side).
Step 6
Make glaze: Whisk together tomato paste, maple syrup, vinegar, and paprika. Brush over meatloaves.
Step 7
Bake: Transfer skillet to oven and bake 20-25 minutes until internal temperature reaches 74°C.
Step 8
Prepare cauliflower: While meatloaves bake, cut cauliflower into florets. Boil in water until tender (10 minutes). Reserve 60ml cooking liquid, then drain.
Step 9
Make mash: Process cauliflower in food processor until smooth. Add cooking liquid, butter, Greek yogurt, and squeezed roasted garlic. Season with salt and pepper. Pulse until creamy.
Step 10
Serve: Garnish meatloaves with fresh parsley and serve with cauliflower mash and steamed broccoli or green beans.
