Leftover turkey and ham pie

This amazing pie is a great way to use up your leftover turkey and ham. The gravy it produces is incredible!

Instructions

Step 1
Gently fry ham and thyme in olive oil
Step 2
Add sliced leeks and season with salt and pepper
Step 3
Turn heat down low and cover. Cook for 30 mins. The leeks will soften.
Step 4
After 30 mins add in leftover turkey and stir into leek mixture
Step 5
Add in flour and stir until combined
Step 6
Pour over chicken stock and stir in double cream
Step 7
Pour the mixture into a sieve over another pan to collect the gravy
Step 8
Spread the pie mix into an oven tray and cover with the puff pastry
Step 9
Egg wash the pastry and cook at 180 for 35-40 mins until golden brown
