For Paratha Dough

2 cupAll purpose flour

1 tspSugar powder

2 pinchSalt

½ tspBaking powder

2 TbsClarified butter

Water
as required
For Layering Paste
For Sauce

1 cupMayonnaise

Fresh cream

3 TbspMilk

1 TbspHot sauce

1 tspSalt

2 pinchesBlack pepper

½ tspPaprika

½ tspGarlic powder

½ tspPickles

3 Tbspcucumber
soaked in vinegar or quick-pickled
For Smash Beef Patty
Instructions
Step 1
Step 1 – Prepare the Dough.
1. In a bowl, mix flour, sugar, salt, baking powder, and ghee.
2. Slowly add water and knead into a soft dough
3. Grease lightly with ghee, cover, and rest for 30 minutes.
4. Divide dough into 8 equal portions (pedas).
Step 2
Step 2 – Prepare Layering Paste.
1. Mix 2 tbsp flour with ¼ cup ghee until smooth.
2. Set aside for use while shaping parathas.
Step 3
Step 3 – Shape the Paratha.
1. Roll each peda thinly.
2. Spread a thin layer of the ghee-flour paste on top.
3. Cut into thin strips, gather, stretch slightly, and roll into a spiral shape.
4. Tuck ends in and rest again for 15–20 minutes.
5. Flatten each rested peda gently by hand into small round discs (do not use a rolling pin).
Step 4
Step 4 – Cook the Parathas.
1. Heat a skillet/tawa and lightly grease with oil or ghee.
2. Cook parathas on medium-low heat, brushing lightly with oil/ghee.
3. Cook until golden and layered, then set aside.
Step 5
Step 5 – Make the Sauce.
1. Mix mayonnaise, cream, milk, hot sauce, salt, black pepper, paprika, garlic powder, and pickles.
2. Stir well until smooth and creamy.
Step 6
Step 6 – Prepare the Beef Patties.
1. Mix beef mince with salt, pepper, whole spice powder, and ginger-garlic paste.
2. Preheat skillet and lightly grease.
3. Place a ball of beef mince, then smash it flat with a burger press or metal bowl to form a thin patty.
4. Cook 3–4 minutes until browned, add sliced onions on the side to caramelize.
5. Flip, top with cheese slice, and cover briefly to melt.
Step 7
Step 7 – Assemble the Smash Paratha Burger.
1. Spread sauce on one paratha.
2. Place beef patty with melted cheese.
3. Add caramelized onions and more sauce if desired.
4. Cover with another paratha.
5. Serve hot and enjoy!
