Banh Bot Loc (Tapioca Dumplings)

Traditional Vietnamese dumplings made with tapioca flour, filled with seasoned pork and shrimp, and wrapped in banana leaves. A delightful and savory treat.

Instructions

Step 1
Make the Annatto Seed Oil: Heat cooking oil in a pan. Add the annatto seeds and let them simmer over low heat until the oil turns a beautiful orange color. Remove the seeds and set the oil aside.
Step 2
Make the Filling: Wash the pork belly and shrimp. Slice the pork into small pieces. Put the pork and shrimp in a bowl and season them. Add 1 tbsp pepper, 1/2 tsp sugar, minced shallots, 1 tbsp annatto seed oil, and 2 tbsp sugar. Mix well. Heat cooking oil in a pan. Add the seasoned shrimp and pork, and simmer until they turn golden and fragrant. The shrimp and pork are now ready to be used as the filling.
Step 3
Make the Dough: Pour about 0.5 liters of water into a pot and bring it to a boil. Add 1 tbsp of salt and 1 tbsp of cooking oil. Pour the flour into a large bowl. Slowly add the boiling water to the flour and stir. Continue to knead the dough with your hands. Use a small rolling pin to flatten the dough into thin pieces. Use a round mold to cut out small, thin pieces of dough for the dumplings.
Step 4
Boil the Dumplings: Add the filling to the center of each dough circle and fold it over, making sure to seal the edges tightly so the filling does not fall out. Bring a pot of water to a boil. When the water is boiling, add the dumplings. After the dumplings are cooked, they will float to the surface. Use a slotted spoon to remove them and immediately place them in a bowl with a little cooking oil to prevent them from sticking together.

​8 tbsp water ​2 tbsp fish sauce ​2 tbsp sugar ​1/2 tsp chili ​Mix all ingredients together. ​Pour the dipping sauce over the dumplings and enjoy.
