BROILED SALMON WITH MAPLE LEMON GLAZE

Instructions

Step 1
Preheat the oven to broil and place the oven rack in the middle position.
Step 2
Combine the lemon juice, maple syrup, apple cider vinegar, and oil in a large resealable plastic bag. Place the salmon in the bag, seal and refrigerate for 10 minutes, turning the bag once after about 5 minutes.
Step 3
After 10 minutes, remove the salmon from the bag, reserving the marinade. Place the marinade in a microwave safe bowl and microwave on high for 1 minute (the mixture will be bubbling)
Step 4
Place a large oven-safe skillet (cast iron works well) over medium-high heat. Place the salmon in the pan, skin side down (if using salmon with skin). Cook for 3 minutes and then flip the salmon and brush the marinade evenly over each fillet. Cook for another 3 minutes and flip again, then brush the marinade over each fillet again.
Step 5
Place under the broiler skin side down for 3 minutes, or until the desired degree of doneness (I recommend medium-rare). Season with salt and pepper to taste.
