Instructions

Step 1
Place the chicken breasts between sheets of greaseproof paper, then bash and flatten to 1.5cm thick.
Step 2
Put a griddle pan on high heat to get nice and hot.
Step 3
Trim and slice the bases of the lettuces, then place in a big bowl.
Step 4
Halve or quarter the tomatoes and slice the cucumber. Add both to the bowl.
Step 5
Squeeze the avocado flesh into a blender, grate in half the Parmesan, add peeled garlic and anchovies, and squeeze in the lemon juice. Add a few drops of Worcestershire sauce and the extra virgin olive oil, then whiz until smooth. Season to taste.
Step 6
Griddle the chicken for 3 to 4 minutes on each side, and the bacon for a couple of minutes on each side, until nicely charred, then remove.
Step 7
Add half the dressing to the bowl of salad, toss well to coat, then transfer to a serving platter.
Step 8
Slice the chicken and arrange on top of the salad with the bacon, then drizzle over the remaining dressing.
Step 9
Grate over remaining Parmesan, sprinkle with the rest of the oregano, then serve with warm crusty bread.
