Instructions

Step 1
Add chilli powder, sesame seeds, brown sugar and salt to a pyrex jug and mix

Step 2
Add garlic cloves (unpeeled but slightly crushed), ginger (peeled), star anise, cinnamon sticks and oil to a saucepan and heat for roughly 7 mins on a medium high heat until the garlic and ginger turns golden brown

Step 3
Test the oil by dropping in a few sesame seeds, if they sizzle and quickly float to the top then it's ready, if they burn then the oil is too hot. Let it cool slightly and then re-test
Step 4
Remove the aromatics from the oil and then pour it over the spice mix
Step 5
Stir the mix and let it cool for an hour, stirring intermittently, before pouring into a jar
