Instructions

Step 1
Combine sourdough starter, pumpkin purée, maple syrup, and salt in a large bowl.

Add flour and mix until you form a shaggy dough.
Step 3
Knead the dough for about 5 minutes until it becomes smooth.
Step 4
Let the dough rest for 30 minutes.
Step 5
Perform 3 sets of stretch and folds over the course of 90 minutes, with 30-minute intervals.
Step 6
Allow the dough to rise for 4-6 hours in a warm place, until it doubles in size.
Step 7
Shape the dough and place it into a loaf pan.
Step 8
Let it proof for another 2 hours or overnight in the refrigerator.
Step 9
Preheat the oven to 450°F (230°C).
Step 10
Bake the loaf covered for 20 minutes, then uncover and bake for another 15 minutes until golden brown.
Step 11
Let the loaf cool completely before slicing.
