Instructions
Step 1
Cook rinsed rice with equal part water + 2 tbsp (if CR rice) with splash of sesame oil, 1 tbsp of neutral oil and heavy pinch of salt
Step 2
Poach shrimp in boiling water with splash of sake and pinch of salt for 1 min or until pink, being careful not to overcook. Add to ice bath, drain and add pinch of salt and sugar.
Step 3
In a large bowl, combine shrimp, avocado, edamame, cucumber, and green onions.
Step 4
In a separate bowl, mix mayo, sriracha, sesame oil, and rice vinegar to make the dressing.
Step 5
Pour the dressing over the shrimp mixture and toss gently to combine.
Step 6
Sprinkle black sesame seeds on top.
Step 7
Serve with organic roasted seaweed snack.
