Garlic Butter Chicken Kebabs with lemon & herb dip

Super garlicky and buttery with a citrus kick, these kebabs are amazing. They're low in calories but packed full of flavour and take just over 30 minutes to make. Air fry or bake the kebabs before brushing all over with the garlic butter, packing them into your flatbreads or serving with rice and drizzling with a delicious lemon and herb dip.

Preheat the oven to 180°C (160°C fan/350°F/Gas 4)

Combine all the ingredients for the kebabs in a large bowl, season well with salt and pepper and mix until combined, ensuring the chicken is well coated. Divide the chicken among four skewers, then transfer to a large baking tray and bake in the oven for 20-25 minutes. Alternatively, cook in an air fryer at 200°C for 12-15 minutes.

Meanwhile, mix together the ingredients for the lemon and herb dip in a bowl, season well with black pepper, then transfer to four sauce pots.

Next, make the garlic butter. Put the butter and garlic into a small bowl and microwave on high for 30-45 seconds. Alternatively, melt together in a small pan over medium heat. Brush the butter over the cooked kebabs.

If using flatbreads, then build the flatbreads and wrap tightly in cling film or tin foil. If serving with rice, then transfer the kebabs and rice to airtight containers. Serve with the chopped tomatoes, cucumber and lettuce.
