Instructions

Step 1
Trim the greens off but not flesh, scrub clean. Boil for 30 min to an hour until tender but not soft. Rinse in cold water. Use a pairing knife to peel off skins, cut off ends and any bad spots. Cut into bite size prices. Pack beets into hot sanitized jars. Ladle hot liquid until beets are covered. Add lid and ring. Put in water bath for 10 minutes.
Step 2
Boil 6 cups of vinegar, 3 cups water, 1 large or 2 small cinnamon sticks and 12 cloves. I wrap the cloves and cinnamon in cheese cloth so I don't have to pick them out later. Boil for 3-5 min. Add about 1 cup of honey. Stir. Remove from heat.
Step 3
Pack beets into hot jars and cover beets with syrup. Place Lids and seals on jars. Process in water-bath for 10 mins (pints), 15 mins (quarts)
