Instructions

Step 1
Heat half butter over medium high heat. Add scallions & mushrooms.
Step 2
Cook 3-4 minutes, stirring regularly. Push to side of skillet.
Step 3
Melt remaining butter and cook eggs until desired doneness.
Step 4
Sprinkle with salt & pepper, parsley and/or whatever other herbs/seasonings you prefer.
