Instructions

Step 1
Prep zucchini: Grate, salt, and squeeze out excess water (same as pan-fried version).
Step 2
Mix batter: Combine zucchini, eggs, breadcrumbs, feta, scallions, herbs, garlic, and black pepper.
Step 3
Shape fritters: Line a baking sheet with parchment. Scoop 2 heaping tablespoons mixture per fritter, flatten slightly.
Step 4
Brush with olive oil: Lightly brush or spray tops with olive oil for crispness.
Step 5
Bake: 400°F (200°C) for 20–25 minutes, flipping halfway, until golden and set.
Step 6
Finish off in Airfryer for more of a crisp.
