Ingredients
4 servings

6sausages
any type

1red onion
cut into wedges

2 clovesgarlic
minced

8cherry tomatoes

2bell peppers
seeds removed and chopped

1 teaspoondried basil

1 teaspoondried oregano
2 teaspoonschicken and steak seasoning

200gmini potatoes
cut in half

2 tablespoonsolive oil

salt

pepper

350mlchicken stock
made with a chicken stock cube dissolved in boiling water
Instructions
Step 1
Preheat the oven to 200oC fan / 180oC 350oF. Chop the vegetables, leaving the onion root intact. Place the veggies in a 9x13 inch oven-proof dish. Drizzle with olive oil and sprinkle with dried oregano, basil, and chicken and steak seasoning. Mix well. Place the sausages on top and add the cherry tomatoes. Roast in the preheated oven for about 20 minutes. Pour hot chicken stock into the tray, stir, and turn sausages to brown on all sides. Return to oven and roast until sausages are golden and veggies are charred, about another 20 minutes. Serve directly from the tray.
