Step 1
Preheat oven to 375°F/175°C
Step 2
Whisk egg whites, apple sauce and pumpkin together
Step 3
Stir in pancake mix, then fold in nuts & seeds. Add 2 tblsp linseed, sunflower and almond (LSA) mix, optional.
Step 4
Divide into lined muffin tin
Step 5
Bake 18-20 minutes, until toothpick cubes out clean.
