Mix flour, salt, pepper, and TSM chicken rub in a small bowl

Cut chicken into 1/2” to 3/4” cubes. I do this while it is partially frozen. Set aside.
Step 4
Dice Onion and Garlic. I use a whole onion, use less as desired.
Step 5
Heat oil in large chili pot and cook onions and garlic 5 to 8 minutes, until partially translucent.
Step 6
While onion/garlic is cooking put the Corn Meal in a large Tupperware bowl with cover. Drop in the cubed chicken, sprinkle the seasoning mix over the chicken and shake to coat all meat evenly.
Step 7
Put the cubed seasoned chicken in the oil with the onions and garlic, allow to cook until slightly browned.
Step 8
Add Green Chili Enchilada sauce and the Bush’s chili beans. Stir and add the Cannellini beans, Garbanzo beans, and Corn. Bring to a boil then drop to low and cook for several hours, stirring occasionally. If desired, add 1 1/2 tsp of sugar to cut acidity.
