3 lbbeef chuck roast
or leaner roast
3onions
thinly sliced
4shallots
halved
3cloves garlic
minced
1 cupdry white wine
OR 1/2 cup unsweetened apple cider + 1/2 cup broth
2 cupsbeef broth
low sodium
2 Tbspsugar-free apple butter
optional, flavor
1 lbcauliflower florets
instead of potatoes
1 Tbspalmond flour
instead of regular flour
1 Tbspolive oil
Fresh thyme
sage
Instructions
Step 1
Sear roast in oil, remove.
Step 2
Cook onions/shallots, stir in almond flour.
Step 3
Deglaze with wine/cider/broth, add roast + garlic + thyme.
Step 4
Cover and braise (oven 325°F, ~3 hrs).
Step 5
Add cauliflower last 30 min; finish with fresh sage.
