Instructions
Step 1
In a Dutch oven, cook sausage, carrots, and onion over medium-high heat for 8-10 minutes or until the sausage is no longer pink, breaking up sausage into crumbles.
Step 2
Stir in garlic; cook 2 minutes longer.
Step 3
Drain.
Step 4
Place tomatoes and red peppers in a food processor; process until finely chopped.
Step 5
Add to sausage mixture; stir in lentils; broth and seasonings.
Step 6
Bring to a boil. Reduce heat; simmer covered, 20 minutes, stirring occasionally.
Step 7
Stir in kale; cook 10-15 minutes longer or until the lentils and kale are tender.
Step 8
Remove bay leaf.
