Step 1
THE FORCEMEAT - Chop the onions, garlic, mushrooms, and coriander. Fry the onions with oil (sesame or other), add the meat, wait until it is 2/3 cooked, add the garlic and mushrooms. Season with salt and pepper, add a little light soy sauce, then the coriander before stopping cooking.

THE DOUGH - Dissolve the yeast in a bowl of warm water. Mix the flour and lard in a large bowl. Add the bowl of yeast and mix. Add the eggs and mix. Add water until you get a smooth, slightly sticky dough. Let it rise for 2 hours.

CONFECTION - Make 'pancakes'. Fill them with stuffing. Close and place on small squares of aluminum foil.

COOKING - Steam with an electric steamer or wok. Serve with chili sauce or fish sauce.
