Instructions

Step 1
1. Press tofu to remove excess water. Cut into cubes.
Step 2
2. Mix olive oil, lime juice, zest, soy sauce, chili powder, paprika, cumin, salt, and pepper. Toss tofu cubes in marinade. Let sit 15–30 minutes.
Step 3
3. Bake tofu at 400°F (200°C) for 20–25 minutes until golden OR pan-fry until crispy.
Step 4
4. Divide rice into 4 containers. Add black beans, corn, bell peppers, and tofu.
Step 5
5. Whisk drizzle ingredients together. Store separately in a small container, drizzle over bowls before eating.
Step 6
6. Top with avocado and cilantro before serving.
