Instructions
Step 1
Tenderize chicken breasts with mallot.
Step 2
Heat oven to 375.
Step 3
In small bowl, combine 1/3c Parmesan and crumbs.
Step 4
Dip chicken in egg; coat with cheese-crumb mixture.
Step 5
In large skillet, brown chicken in hot oil, then remove to ungreased baking pan or dish.
Step 6
Add onion to skillet; saute until tender.
Step 7
Stir in salt, pepper, oregano, and tomato sauce.
Step 8
Top pieces of chicken with mozzarella cheese, then pour tomato mixture over cheese, spreading to cover.
Step 9
Sprinkle with additional Parmesan cheese and bake at 375 for 30 minutes or until bubbly.
