Instructions
Step 1
Heat olive oil in a large pot over medium heat.
Step 2
Add chopped garlic and sauté for 1–2 minutes until fragrant.

Stir in cumin, paprika, and red pepper flakes; cook for 30 seconds to bloom the spices.

Add tomato paste and cook for another minute, stirring to combine.
Step 5
Add cooked chickpeas, roasted bell pepper, bay leaves, and enough water or broth to reach desired stew consistency.
Step 6
Stir in za’atar, salt, and pepper.
Step 7
Bring to a simmer and cook for 15–20 minutes, stirring occasionally, until the stew thickens and flavors meld.
Step 8
Remove bay leaves before serving.
Step 9
Serve warm with bread, rice, or over greens.
