Instructions
Step 1
Saute onions and peppers for a few min. Add garlic for the last minute.
Step 2
Place all veggies in a large roaster.
Step 3
Drizzle with olive oil and add seasonings.
Step 4
Bake at 425* for 1 hour, stirring halfway.
Step 5
Drain liquid, then immersion blend.
Step 6
Simmer on the stove until desired thickness.
Step 7
Scoop sauce into jars, adding 1T lemon juice to quarts, 1t to pints.
Step 8
Wipe rim, cover with hot lid, and screw on ring. Water bath for 20 min.
