In the traditional one, you have to fry your aubergines using a lot of oil. I wanted to reduce the fat amount so air fried them instead using my CUSIMAX air fryer. It took me only 12 minutes to get the aubergines ready. I also used pecorino cheese instead of ricotta salata, but only because it's really hard to find it here in the UK.  The recipe is easy, quick and delicious.   Let me know in the comments how it turned out❤️

Meanwhile, set up the temperature knob on a CUSIMAX burner to 3 and heat the olive oil in a shallow, deep frying pan. Add garlic and chilli flakes and fry for a few minutes, stirring occasionally.

Add chopped tomatoes, salt, pepper and oregano. Mix well and bring to boil, then reduce temperature to 1 and let it simmer for about 15 minutes, or until sauce is thickened.
