This recipe is a healthier version of the Pasta Alla Norma. In the traditional one, you have to fry your aubergines using a lot of oil. I wanted to reduce the fat amount so air fried them instead using my CUSIMAX air fryer. It took me only 12 minutes to get the aubergines ready.
I also used pecorino cheese instead of ricotta salata, but only because it's really hard to find it here in the UK.
The recipe is easy, quick and delicious.

For the air-fried aubergines:
For the marinara sauce:
2 Tbspolive oil
2garlic cloves
⅛ tspchilli flakes
add more or less depending on your liking
400gchopped tomatoes
salt
to taste
pepper
to taste
1 tspdried oregano
For the pasta:
Instructions
Step 1
Using a vegetable peeler cut off long alternating strips of aubergine peel.
Step 2
Cut the aubergines into 1cm rounds.
Step 3
Add salt, pepper, and olive oil and mix well.
Step 4
Air fry them at CUSIMAX air frier at 220C for 12 minutes. Shake on halfway through.
Step 5
Meanwhile, set up the temperature knob on a CUSIMAX burner to 3 and heat the olive oil in a shallow, deep frying pan. Add garlic and chilli flakes and fry for a few minutes, stirring occasionally.
Step 6
Add chopped tomatoes, salt, pepper and oregano. Mix well and bring to boil, then reduce temperature to 1 and let it simmer for about 15 minutes, or until sauce is thickened.
Step 7
Cook the pasta in salted water until al dente. Keep 1 cup of pasta water aside for the sauce.
Step 8
When the sauce is ready, add the aubergines and mix well until combined.
Step 9
Then add pasta and pasta water and mix again.
Step 10
Add grated cheese (save some for garnish) on top and some chopped basil.
Step 11
To serve, garnish with more cheese and basil leaves and enjoy!
