Roasted Tomato Boursin Pasta Sauce

This roasted tomato sauce is amazingly creamy and delicious - and toddler and baby approves. I prefer to use boursin cheese (any flavor) over feta. About 5 min of prep and 5 min after cooking and dinner is served.

Instructions

Step 1
Put cheese block in center of shallow roasting dish. Put tomatoes in dish around the cheese. Use any kind of tomato, if larger than a grape tomato just cut up to that size. Add 1/2 cup chopped onions. Add 4 garlic cloves smashed. Drizzle with lots of evoo. Salt and pepper to taste. * I had about 4tbs of pecorine cheese left over and added it on top. It added a slight depth to flavor but I don't miss it when I make it without that.
Step 2
Preheat oven to 375. Once heated bake for 40 min. Then remove and let cool for a bit.
Step 3
Add everything to a blender and blend well. Serve over pasta or rice or whatever.
