Ingredients
8 servings

2 tablespoonsolive oil
or vegetable

2onions
large, chopped

3carrots
coarsely grated

½ teaspoonmarjoram
crumbled

⅓ teaspoonthyme leaves
crumbled

1 x 28 ouncecan tomatoes
with their juice, coarsely chopped

7 cupsbroth
beef, chicken, or vegetable

1 ½ cupsdried lentils
rinsed and picked over

¼ teaspoonsalt
if desired

¼ teaspoonblack pepper
freshly ground, to taste

6 ouncesdry white wine

⅓ cupfresh parsley
chopped, or 2 tablespoons dried parsley flakes

4 ouncescheddar grated
Instructions
Step 1
Heat the oil in a large saucepan, and sauté the onions, carrots, marjoram, and thyme, stirring the vegetables, for about 5 minutes.
Step 2
Add the tomatoes, broth, and lentils. Bring the soup to a boil, reduce the heat, cover the pan, and simmer the soup for about an hour until the lentils are tender.
Step 3
Add the salt, pepper, wine, and parsley, and simmer the soup for 5 more minutes.
Step 4
Serve with cheese sprinkled on each portion.
